Here at the Gasol Foundation, we’re committed to educating people on how to follow a healthy diet, but it’s also important to not lose the variety when cooking! Follow this recipe to add a healthy and diverse new dish to your repertoire.
COUSCOUS WITH BROCCOLI, RAISINS AND CARROT CURLS
200 g of couscous
200 ml water
½ small broccoli
2 tablespoons raisins
To prepare the couscous, mix with 2 olive oil tablespoons, a pinch of salt and a pinch of black pepper. Add water to the mixture and let stand. After 10 minutes mix the couscous. Chop the broccoli and the mushrooms and cook in a pan with a little olive oil until they are cooked. Salt and pepper and add a little curry powder. Mix the vegetables with the couscous and raisins and heat it a few seconds.
For carrot curls: With a vegetable peeler to make carrot sticks.
Finally: Have the couscous in a hoop for plate or in a cup and mount it in the middle of the plate. Distribute strips of carrot around the plate, season and serve.
